Cultivation altitude: 1,780 - 1,800 m.
Processing method: Anaerobic fermentation
Fermentation is done by “natural” microbes using the sugars present in the coffee cherries. After removal from the fermentation barrels, the process follows the same as with natural coffee, except that in the case of fermented cherries, the cherry skin is softer and any broken cherries will be removed when placed on the drying beds.
