Cultivation altitude: 1,400 m.
Processing method: Washed nitrogen fermentation 

The journey of this coffee begins right on the plant, with a manual harvest exclusively dedicated to cherries that have reached their ideal ripeness. Once at the processing station, the cherries undergo rigorous sorting based on density and premium quality parameters.

At this point, a unique transformation phase begins:

• Preparation: The fruits are placed inside a cutting-edge bioreactor.

• Fruity Fermentation: A special blend of pre-fermented pineapple and peaches is added to the coffee, activated by a custom-selected starter culture.

• Control and Recirculation: For the next 36 hours, the fermentation environment is constantly temperature-monitored, while the must is recirculated to ensure an even infusion.

• Protected Drying: To preserve all the acquired aromas intact, the drying process takes place slowly in a dark, climate-controlled room equipped with dehumidification systems.

To fully unleash the aromatic profile and nuances of this Specialty Coffee, our recommended brewing methods are AeroPress or Filter (such as V60 or Chemex). Thanks to its distinctive character, it also proves to be an exceptional and innovative ingredient for crafting signature drinks and sophisticated cocktails.
